The harvest of the white asparagus in Cantello has started. It is a very important moment in the cycle of life of this amazing product. The harvest of the turions takes places in April and May, and in the first
year they can reach a maximum of 30 days of production, while in the following years they can reach 60 days.
The harvest of turions happens daily and it is done manually with the help of a gouge knife, as soon as the asparagus appears on the ground.
After the harvest, the turions are washed and selected, divided into groups according to their length, dimension and appearance. Once they are selected, they are tied together in uniform 20 to 22 cm long cylindrical bundles.
