Grape Variety: 80% Chardonnay; 20% Pinot noir.
Grape Harvest: Strictly manual and in wooden crates.
Wine-making/Vinification: White winemaking (skin is separated from the juice during fermentation) in pneumatic press with qualitative splitting up of the musts.
Decantation (Primary fermentation): Addition of selected yeasts and fermentation in stainless steel tanks. The cuvée is made in the Spring. After the addition of sugar syrup and yeast for secondary fermentation, it is bottled and stacked on its side to aid refermentation and slow refinement.
Refinement: At least 18 months on the yeasts, without liqueur d’expeditiòn
Alcoholicity: 12.5% vol.
Visual inspection: intense yellow with golden reflections, fine and persistent perlage
Fragrance: firm, ample, with evident scents of flowers and honey
Taste: embracing, full, firm and persistent
Food-matching: great with appetizers and with fish dishes, shellfish and main courses with meat. Ideal for an entire meal.
