Vegan saffron quiche
Ingredients – serves 8
  • 1 vegan shortcrust pastry sheet
  • 700 g potatoes
  • 250 g peas
  • 3 medium size carrots
  • 1 soy cream carton
  • 4 saffron threads
  • Extra Virgin olive oil
  • Parsley
  • Salt
  • Pepper
We recommend using fresh ingredients.

How to make a vegan saffron quiche

  • Boil cubed potatoes and carrots
  • In a bowl, smash the potatoes (previously peeled) with a fork. Let cool for 15 minutes.
  • Gently grind saffron threads in a mortar, then soak in warm water for 30 minutes.
  • Mix the threads with soy cream, until everything is well bended.
  • Add cubed carrots, peas, salt, pepper, parsley and a bit of olive oil to the smashed potatoes.
  • Press pastry into a flan dish and prick the bottom with a fork. Spread the potatoes filling and pour over the cream/saffron mix.
  • Preheat the oven to 180°, then bake the quiche for 40 minutes.
