GRAPE HARVEST: second half of August , with meticulous selection of the bunch before squeezing
AVERAGE YIELD FOR Ha: 70 ql/ha; 46 hl/ha
WINE MAKING: the must is obtained by the soft pressing of the grapes and then is collected in stainless steel tanks where the first alcoholic formation starts. The temperatures are kept to 15-16° C in order to enhance the aromas and the taste of the wine. The “cuvee” Le Cantorie is obtained only in the finest vintages through the careful blending of wines stored both in stainless steel tanks (80%) and in small oak barrels (20%) up to 8 months.
