Tarozzi, or Taròz in dialect, is a typical peasant dish from Valtellina. It is very popular in the mountain regions and its basic ingredients are seasonal vegetables which are easily available. The main ingredient which we cannot miss to prepare this recipe is Casera PDO cheese, a cheese from Valtellina which is employed in several local dishes.

Tarozzi with Casera PDO

  • 200g Valtellina Casera PDO
  • 400g potatoes
  • 700g green beans
  • 300g shelled beans
  • 1 onion
  • 250g butter
  • salt
  • pepper
We have a variety of choices to realise this recipe..
We can use another typical cheese from Valtellina, Bitto cheese instead of Casera; anyway we can use other types of cheese but it is preferably to employ a semi-fat one. Differently from the past, today we use bacon which is browned with onion. This makes the dish more tasty.

How to cook Tarozzi with Casera PDO, the traditional recipe

  • In a capacious pot with water and salt boil potatoes and green beans; boil the beans in another pot.
  • When the vegetables will be ready drain them and put temporarily aside.
  • Brown the onion with a part of the butter, meanwhile smash coarsely the vegetables with a fork. As the onion will be browned, add the vegetables and let it cook at low heat with the lid for 5 mins.
  • Add the leftover butter, chopped cheese, pepper, salt then stir. Serve it as it is very hot.
